For maximum security and to ensure that no two pins are the same, the Kiosk pin is automatically populated and unique to each user. Therefore, the Kiosk PIN code cannot be changed or customized. We are however open to your feedback and capability is currently on our product roadmap. You can vote for the capability and influence the speed at which it's developed using the link attached here.
